Quick & Easy Greek Inspired Pizzas
This pizza came together because of one spice blend and a well stocked fridge, I wasn't expecting much but it was so delicious I had to write it up.
Having a well-stocked fridge (and pantry) is essential for preparing quick and effortless meals that offer nourishment without requiring extensive preparation or cooking time.
Today, realizing I was short on time and needed a quick lunch before heading out to run errands, I found myself sitting in front of the fridge feeling frustrated. I was hungry and reluctant to spend a lot of time preparing something. Just as I was about to close the fridge and skip lunch altogether, an Amazon delivery arrived. Inside the package was a Greek spice blend that TikTok shamelessly influenced me to purchase, and that's where the inspiration for this pizza began.
The pizza turned out so tasty that I'm here writing up this recipe for you.
What you’ll need:
2 tortillas (I used the almond flour tortillas from Siete)
approx 4 tablespoons your favorite tomato sauce, divided amongst 2 tortillas
1 bell pepper, any color (I used orange), diced small or cut into thin strips
1 link of chicken sausage, (I used Bilinski’s Chicken Sausage with Mushrooms & Italian Herbs), sliced thin
a handful of baby spinach, cut into ribbons
3-4 large olives, sliced thin (I used these green olives stuffed with garlic)
about 1/4 cup of crumbled feta
a drizzle of olive oil
greek seasoning to taste or any other dried herbs of your choice
* In my opinion, recipes should always be used as a guideline - don’t have or don’t like something from the list above, use what you have! Here are a few sub suggestions:
proteins: grilled chicken, chickpeas, tofu
greens: kale, arugula, Swiss chard
veg: fresh chopped tomato, shredded zucchini, red onion
dairy free: nutritional yeast
How to:
Preheat oven to 425 degrees and line a baking sheet with parchment paper.
Place the tortillas on the baking sheet and drizzle with a little olive oil and lightly season with greek seasoning (or salt, pepper, dried herb combo of your choice). Bake the tortillas in the oven until just slightly golden brown.
Remove the tortillas from the oven and spread on the tomato sauce and then add your desired toppings.
Drizzle with a little extra virgin olive oil and a generous sprinkling of the greek seasoning (or your custom seasoning blend).
Return to the oven to allow the tortilla to crisp further and the toppings to cook through. Pizzas are ready when the tortillas are golden brown and crisp, the sauce is bubbling, and the cheese has melted.
Remove from the oven and transfer to a cutting board, allow the pizza to rest for a few minutes before slicing.
